Furuzuke Dressed with Young Ginger/古漬けの新生姜和え

Furuzuke refers to a vegetable or other food pickled for a long period of time.  For example, it can refer to a cucumber pickled in nukadoko for two or more days intentionally or inadvertently.  It can also refer to cucumbers pickled in salt intentionally for a long period of time for storage purposes.
If you think that furuzuke is good for nothing, you are sadly mistaken.

Two cucumbers, pickled in the nukadoko for two days and then stored in the fridge for another two days:
古漬けとは、長い間漬けた野菜などの食べ物を指します。例えば、ぬか床に二日以上(わざと、または、うっかり)漬けたきゅうりを指すこともありますし、保存のために故意に長期間塩漬けしたきゅうりを指すこともあります。
古漬けなんて何の役にも立たないと思ったら、大きな間違いです。

ぬか床に二日間漬けて、冷蔵庫でもう二日間保存しておいたきゅうり二本。


Thinly slice them.
薄切りにします。


Taste some slices.  If they are salty, soak in water for a few minutes to remove some salt.  Don't remove all salt.

味見します。塩辛かったら、水に数分漬けて、塩分を少し抜きます。完全には抜かないこと。

Cut shin shoga (young ginger), shown on the right in the photo below, into thin strips.
新生姜(下の写真の右側)を千切りにします。


Combine them:
合わせます。


Put some on hot rice, sprinkle some soy sauce, and eat!
温かいご飯に乗せ、しょう油を少しかけて、食べます!

I can attend to my field only once every three or four days, for half an hour to an hour only each time, so there is now weed all over the place.
3、4日に一回、それも各回、30分~1時間しか畑の面倒を見れないので、いまでは雑草だらけです。

Mulukhiyah flowers are slightly poisonous, so I carefully removed them when picking up leaves.
モロヘイヤの花は若干毒性があるので、葉を取る際に、注意して取り除きました。

I blanched them both for a few minutes, and then finely chopped the mulukhiyah leaves.
ともに数分、茹で、モロヘイヤの葉は細かく刻みました。


We had them both as ohitashi, as usual.
いつも通り、おひたしとして食べました。

Miso Soup/味噌汁

Here is the way I make miso soup:
I usually cook the vegetables the night before.
普通は、前日の夜に野菜を調理しておきます。


Cabbage and onion in this example.
In the morning, I turn on the gas, and put some instant dashi in the pot.  I sometimes add some abura age, which I shred and store in the freezer in advance.  If I decide to add wakame instead, I add it after I add miso and turn off the gas.
朝、火を点けて、鍋に出汁の素を入れます。前もって刻んで冷凍庫にしまっておいた油揚げを入れる時もあります。代わりにワカメを入れる場合は、味噌を入れて、火を止めてから入れます。


I can't say how much miso I add.  About this much.
味噌をどのくらい入れるか言えません。だいたいこれぐらいです。


I turn off the gas before the pot comes to a boil.
鍋が沸騰する前に火を止めます。


The bowl of rice (o-chawan or chawan) is placed on the left, and the bowl of miso soup (o-wan) is placed on the right.
ご飯の入ったお茶碗(茶碗)は左に、味噌汁の入ったお椀は右に置きます。


This is the standard way of placing them.
これが標準的な置き方です。

Nasu Miso/ナス味噌

Ingredients:
10 eggplants
10+ shiso leaves (or ginger)

2 tbsp oil

Miso
Mirin
Sugar

Cut eggplants into your favorite shapes.
材料:
ナス 10個
シソの葉 10枚以上(または生姜)

油 大さじ2

味噌
みりん
砂糖

ナスを好きな形に切ります。


I cut mine in half lengthwise first and then cut one half diagonally.
私はまず縦に半分に切り、半分を斜めに切ります。

Soak in water for a few minutes to remove "aku" (harshness).
水に数分漬け、アクを取ります。


Cut shiso leaves into small pieces, soak in water for a few minutes to remove "aku", and squeeze.
シソの葉を細かく切り、水に数分漬け、アクを取り、絞ります。


First, stir-fry eggplants in oil until soft.  The amount of oil should be relatively large because the eggplants soak up oil.  Then, add shiso leaves and seasonings.
まず、ナスを油で柔らかくなるまで炒めます。ナスが油を吸うので、油の量は比較的多めにします。次に、シソの葉と調味料を入れます。

I can't specify the exact amounts of the seasonings.
調味料の正確な量は指示できません。


Roughly 50-60 ml miso, 30 ml mirin, and 2 tsp sugar.
大雑把に言って、味噌5060 ml、みりん30 ml、砂糖小さじ2程度です。

Stir-fry for another few minutes.
もう数分炒めます。

Nasu miso is an absolute favorite of my wife's.
ナス味噌は妻の大好物です。



I also made inari zushi, using leftover rice.  Why did I make inari zushi?  Because I had just a lot of leftover rice in the freezer and I wanted to use it up.
残りご飯で稲荷寿司も作りました。何で稲荷寿司を作ったかって?冷凍庫に残りご飯がいっぱいあって、使い切りたかったんで!

Pickled Turnips/かぶの漬物

After I pickled the turnip greens in my nukadoko, I had to pickle the turnips in some way or other.  After much thought, I decided to pickle them in salt.

500 g turnips
2 tsp (8 g) salt
Small amount of shio (salted) kombu
One recipe says to pickle in 3% salt, but I know from experience that 3% salt is too salty for my taste, so I reduced the amount of salt to less than 2%, and added some shio kombu for additional flavor.

かぶの菜っ葉をぬか漬けした後、かぶを何らかの方法で漬けなければなりませんでした。色々考えた末、塩漬けすることにしました。

かぶ 500 g
塩 小さじ2(8 g
塩昆布少々
あるレシピーでは、3%の塩に漬けると書かれていましたが、経験から3%の塩では塩辛すぎるので、塩の量を2%以下に減らし、味を付けるため塩昆布も入れました。


Very good!  Even my son liked it!
美味しかったです。息子も美味しいと言ってました。

We also had this sekihan (mochi rice cooked with azuki beans), given to us from my father-in-law.
この赤飯も食べました。義理の父からもらったものです。


 It was very good, too!

Turnip Greens Nukazuke/かぶの葉のぬか漬け

I wanted to buy some daikon greens so I could pickle them in my nukadoko.  I found them sold at a supermarket that were suitable for making nameshi, but I also found turnips with greens sold cheap, so I bought them instead, hoping that turnip greens would be similar to daikon greens.
ぬか漬けにするため、大根の葉っぱを買いたいと思いました。スーパーで、菜飯用のが売っていたのですが、葉っぱのついたカブも安く売っていたので、カブの葉っぱも大根の葉っぱに似ているだろうと期待して、カブを買いました。


Just as I expected, turnip greens nukazuke was quite similar to daikon greens nukazuke.
This morning, I had some with natto (by adding some to the natto and mixing well).
期待通り、カブの葉っぱのぬか漬けは大根の葉っぱのぬか漬けとよく似ていました。
今朝は、納豆と一緒に食べました(納豆に入れて、良く混ぜて)。


DELICIOUS!!!
美味しかったです!

Katsu Sando (Cutlet Sandwiches)/カツサンド

The day before yesterday, I made tonkatsu for supper.
一昨日は夕飯に豚カツを作りました。

I used a pork thigh block of about 400 g.
400 gの豚ももブロックを使いました。


I also used thinly sliced pork.
豚の薄切りも使いました。


Simply rolled.  At first, I thought about rolling with shiso leaves and umeboshi paste, but I gave up the idea.
単に巻いただけです。最初はシソと梅干ペーストと一緒に巻こうと思ったのですが、止めました。

Thus, I made 21 normal katsu and 11 katsu rolls.
というわけで、普通のカツを21枚、巻いたカツを11個作りました。


Yesterday morning, I used two of the leftover katsu in my son's bento.
昨日の朝は、残ったカツのうち2枚を息子の弁当に入れました。


Tare katsu bento!
たれカツ弁当です!

And, for lunch yesterday, I made a katsu sando (sandwich), using three katsu.
そして昨日の昼ご飯には、カツを3枚使って、カツサンドを作りました。


Leftover shredded cabbage, chuunou sauce, Japanese mustard, and lemon juice.
残りのキャベツの千切り、中濃ソース、芥子(からし)、レモン果汁。


It was delicious!
美味しかったです。
